Step 1
Begin by preheating your oven to a toasty 375 degrees F (190 degrees C) and then get your baking sheet ready by lining it with a sheet of shiny aluminum foil.

Next, take those vibrant peppers and slice them in half lengthwise, removing the stem, seeds, and inner ribs. Place the peppers cut-side-down on your prepared baking sheet and let them roast in the oven until they become wonderfully tender, which should take about 30 to 40 minutes. Remember to flip them over halfway through the cooking process for even roasting. Once done, transfer the peppers to a bowl and cover them snugly with plastic wrap to let them steam and cool for around 20 minutes. After they have cooled, peel off the skins, discard them, and chop up the peppers.

Pour in a bit of vegetable broth, cover the pan, and let the veggies steam until they are tender. Add the rest of the vegetable broth, chopped peppers, and seasonings like red pepper flakes, ginger, black pepper, thyme, and sage. Allow the flavors to meld together as the soup simmers for 20 to 30 minutes, ensuring the vegetables become exceedingly tender. Adjust the consistency by adding water as needed. Lastly, stir in the cooked lentils to heat through.
Step 5
For a smoother soup, you can blend it in batches in a blender, making sure not to fill the pitcher more than halfway. Secure the lid with a towel and pulse a few times before blending until smooth. Alternatively, use a stick blender directly in the pot for convenience.
