- ¼ tsp of curry powder
- ½ cup of cubed tofu
- 1 cup of thinly sliced kale
- 1 can (14 oz) of coconut milk
- 3 cups of vegetable broth
- 1 can (15 oz) of chickpeas, rinsed and drained
- ½ tsp of kosher salt
- 3 scallions, finely sliced
- A dash of sriracha sauce
Step 1
Begin by warming oil in a spacious pot over medium heat. Add in the aromatic ginger and garlic, and sauté until their delightful scents fill the air, usually around 2 to 3 minutes. Toss in the onion and continue to cook until it turns tender and translucent, which should take about 4 minutes. Next, introduce the carrots to the mix and cook until they just begin to soften, for around 4 minutes. Then, blend in the green curry paste, followed by the addition of tomatoes, cumin, and curry powder. Stir continuously until the fragrant flavors meld, which usually takes around 4 minutes.
Step 2
Now, gently fold in the tofu, allowing it to soak up the delicious flavors for about 3 to 4 minutes. Add the kale into the pot and cook until it slightly wilts, roughly 3 to 4 minutes. Pour in the creamy coconut milk and bring the ensemble to a gentle simmer, approximately 5 minutes. Then, pour in the vegetable broth along with the chickpeas, and season generously with salt. Let the soup simmer, uncovered, to allow all the flavors to meld together, usually for about 20 minutes. Finally, serve this delectable soup garnished with fresh scallions and a drizzle of spicy sriracha. Enjoy the burst of flavors and comforting warmth with every spoonful!
