Ingredients
- 2 pounds of chicken breasts without bones or skin, sliced into 1 1/2 to 2-inch chunks
- A quarter cup of Mazola® Corn Oil
- One diced medium-sized onion
- One tablespoon of finely chopped garlic
- One small chili pepper, either jalapeno or serrano, deseeded and minced
- Two tablespoons of Mazola® Chicken Flavor Bouillon Powder
- Two quarts of water
- One can, 28 ounces, of drained white or yellow hominy
- Two teaspoons of Spice Islands® Oregano
- A single Spice Islands® Bay Leaf
- A quarter cup of freshly squeezed lime juice
- For the finishing touch, consider these classic accompaniments:
- Slices of lime, diced avocado, cilantro leaves, radish slices, finely shredded cabbage, minced chili peppers, fried strips of corn tortillas or tostadas, sour cream, and crumbled or shredded Mexican cheese
Step 1
Gently pat the chicken dry using paper towels and season it with a pinch of salt and pepper, if desired, to enhance the flavors. In a spacious skillet, warm up a drizzle of oil over medium-high heat. Place the chicken in the skillet and let it brown slightly, spending about 2 minutes on each side to develop a lovely color. Once done, carefully transfer the chicken into a 6-quart slow cooker.
Step 2
Lower the heat to medium and introduce the onions into the skillet. Allow them to cook for 2 to 3 minutes until they start to soften. Toss in the garlic, minced chile, and bouillon powder, cooking for an additional minute to release the aromatic flavors. Pour in a cup of water, stirring well to combine all the delicious ingredients. Take the skillet off the heat and transfer the mixture into the slow cooker. Pour in the remaining water, hominy, sprinkle in some oregano, add a bay leaf, and a generous squeeze of fresh lime juice.
Step 3
Cover the slow cooker and let the ingredients mingle and meld together for 4 to 6 hours on LOW heat or 3 to 4 hours on HIGH heat. The soup is perfectly cooked when the chicken is tender and effortlessly pulls apart. Use two forks to shred the chicken into delightful pieces. Serve the soup into bowls and allow your guests to personalize their garnishes as they prefer.
