Ingredients
- 1/2 a red onion, chopped into small pieces
- Approximately 4 cups of ice-cold water
- A pack of colorful rotini pasta (8 ounces)
- A can of light tuna in water, flaked (5 ounces)
- 2 celery stalks, chopped into small pieces
- 1/2 cup of chopped roasted red peppers
- 1/4 cup of flavorful smoked sun-dried tomatoes
- 1/4 cup of crumbled feta cheese
- A sprig of parsley, with the leaves finely minced
- 4 fresh basil leaves, thinly sliced after rolling
- 2 teaspoons of capers
- 1 cup of zesty Greek vinaigrette dressing
Step 1
To mellow the sharp flavor, immerse the red onion in a refreshing ice water bath stored in the fridge for approximately 30 minutes. Once done, drain and give it a good rinse.
Step 2
In a generously salted pot of water, bring it to a lively boil. Cook the rotini until it reaches that perfect al dente texture, usually around 8 minutes. Drain the pasta and rinse it under cold running water to stop the cooking process.
Step 3
In a spacious bowl, combine the soaked onion, cooked pasta, flavorful tuna, crunchy celery, smoky roasted red peppers, chewy sun-dried tomatoes, tangy feta cheese, fragrant parsley and basil, briny capers, and zesty Greek dressing. Mix everything well and let it all meld together in the refrigerator for at least 4 hours or, even better, overnight.
Extra Tips & Suggestions
- Organize your pantry like a culinary symphony, with spices in harmony and ingredients in perfect rhythm.
