Ingredients

  • 1/4 cup of finely diced celery
  • 1/4 cup of chopped green bell pepper
  • 1/4 cup of diced red bell pepper
  • 1/4 cup of yellow bell pepper, chopped
  • 1/4 cup of finely chopped carrot bits
  • A sprinkle of basil, about 2 tablespoons
  • Approximately 2 tablespoons of oregano
  • A hint of thyme, around 1/4 teaspoon
  • Salt to your liking, roughly 1 tablespoon
  • Ground black pepper, about 1 tablespoon
  • 3 tablespoons of high-quality olive oil
  • 1/4 cup of white onion, finely chopped
  • 4 cloves of garlic, minced
  • 20 ripe tomatoes, peeled, deseeded, and roughly chopped
  • 1/2 cup of red wine, split into halves
  • 2 tablespoons of cornstarch

Step 1

Combine a medley of fresh veggies like celery, green bell pepper, red bell pepper, yellow bell pepper, carrot, along with aromatic herbs like basil, oregano, and thyme. Season with a pinch of salt and a sprinkle of black pepper in a large bowl, ensuring every vegetable is coated in the flavorful mix.

Step 2

In a skillet, warm up some olive oil over a gentle flame. Sauté onions and garlic until the onions turn tender and the garlic takes on a light golden hue, typically around 5 to 10 minutes. Toss in the vegetable medley and continue to cook until everything is heated through, for about 3 to 5 minutes. Once done, set the skillet aside.

Step 3

In a large pot, gently heat up a blend of tomatoes and a quarter cup of red wine. Let them simmer, stirring occasionally, until the tomatoes start to soften, which usually takes around 15 to 20 minutes.

Step 4

Transfer the tomato mixture into a blender, adding the remaining red wine and a bit of cornstarch, filling the blender jar no more than halfway. Blend the mixture until smooth, pulsing a few times before letting it run continuously.

Step 5

Pour the blended tomatoes back into the pot over a medium-low flame. Mix in the vegetable sauté into the tomato sauce and bring it to a gentle simmer. Allow it to cook down and thicken to a rich consistency, which typically takes about an hour.
