Ingredients
- 1 cup of rich chocolate stout beer
- 3 fresh green Thai chile peppers
- 3 cloves of garlic, peeled and ready
- 3 tablespoons of earthy brown sugar
- 2 teaspoons of tangy dry mustard
- 1 teaspoon of aromatic garam masala
- 1 teaspoon of savory kosher salt
- 1 teaspoon of zesty ground black pepper
- ½ teaspoon of fiery cayenne pepper
- ½ teaspoon of fragrant ground cumin
- ½ teaspoon of warm ground cinnamon
- ½ teaspoon of flavorful onion powder
- ½ teaspoon of pungent garlic powder
- ¼ teaspoon of spicy ground nutmeg
- 1 whole chicken weighing around 5 pounds
Step 1
Prepare your grill by preheating it to a medium heat. For those using charcoal, arrange the coals to the side of the grill for indirect cooking.
Step 2
In a 12-ounce soda can, pour in stout beer and add in Thai chilies and garlic cloves for a flavorful infusion. In a separate bowl, combine brown sugar, dry mustard, garam masala, kosher salt, black pepper, cayenne pepper, cumin, cinnamon, onion powder, garlic powder, and nutmeg to create a fragrant spice rub.
Step 3
After rinsing the chicken, generously coat its skin with the aromatic spice mixture. Place the soda can filled with the beer concoction on the grill and carefully position the chicken upright on top of the can.
Step 4
Grill the chicken over indirect heat until the juices run clear and a meat thermometer reads at least 165 degrees F (75 degrees C) when inserted into the thickest part of the breast without touching the bone. This should take around 45 minutes. Allow the chicken to rest for 10 minutes before serving to ensure juicy and flavorful results.
