Ingredients
- Sliced one large eggplant into rounds that are 1/4-inch thick
- Prepared 4 strips each of red, green, yellow, and orange bell peppers, after seeding and slicing lengthwise
- Used ¼ cup of olive oil for cooking
- Seasoned with 1 tablespoon of steak seasoning like Montreal Steak Seasoning®
- Sprinkled ¼ cup of crumbled feta cheese
- Added ¼ cup of freshly chopped basil
- Included 1 tablespoon of ground oregano

Get ready to fire up your outdoor grill to the highest setting and give the grates a light coating of oil to prevent sticking.

In a big bowl, toss together the eggplant and colorful bell peppers, generously drizzling them with olive oil and ensuring everything is nicely coated. Sprinkle on some steak seasoning and mix well to infuse all the flavors.

Place the seasoned eggplant and bell pepper slices directly on the hot grill. This should take about 15 to 20 minutes, remember to turn them every few minutes to cook evenly. Adjust the heat if needed to avoid overcooking.

Now, get creative with plating by layering the slices - start with a slice of eggplant as the base and then alternate between eggplant and pepper slices, making sure to include all the vibrant bell pepper colors in each stack. Finish off by sprinkling some crumbled feta cheese on top and a generous dash of fresh basil and oregano for added flavor.
