Ingredients
- 4-5 potatoes
- 4 cups water
- 1 tsp salt
- 3 tbsp oil
- 2 tbsp breadcrumbs
- 1/2 tsp oregano
- 1/2 tsp pepper
- 1/2 tsp salt
- 1/2 tsp chili flakes
- 2 tbsp Parmesan cheese
- 1 tbsp coriander leaves
Step 1
Peel the potatoes and cut them into desired shapes, such as wedges, cubes, or sticks. Ensure uniform sizing for even cooking.

In a large pot, combine the cut potatoes and water. Add 1 tsp salt and bring to a boil. Cook for 12 minutes or until the potatoes are 80% cooked. They should still retain some firmness.

Drain the potatoes and let them cool to room temperature. This step is crucial to remove excess moisture, ensuring a crispy exterior.

Transfer the cooled potatoes to a large bowl. Drizzle with oil and toss gently to coat evenly.

Sprinkle oregano, pepper, chili flakes, salt, breadcrumbs, Parmesan cheese, and coriander leaves over the potatoes. Toss until the potatoes are well-coated with the seasoning mixture.

Grease a baking pan with oil or cooking spray. Arrange the seasoned potatoes in a single layer, ensuring they don't overlap. Bake in a preheated oven at 200°C (400°F) for 10-12 minutes or until golden brown and crispy.

Remove from the oven and let cool slightly. Serve hot with your favorite sauce or mayonnaise.
