Silky Egg Curry

Indulge in the creamy delight of Reshmi Egg Masala, where perfectly boiled eggs are enveloped in a luscious, spiced tomato and cream gravy, infused with aromatic herbs and a hint of saffron for an exquisite touch.

Ingredients

  • Onion 1 medium size
  • Garlic Cloves 5-6
  • Ginger 2 inch
  • Green Chillies 5-6
  • Coriander Leaves ½ bunch
  • Tomato 1 large size
  • Boiled Eggs 5-6
  • Oil ¼ Cup
  • Salt 1 tsp
  • Chilli powder 1 tsp
  • Turmeric Powder ½ tsp
  • Coriander Powder 1 tsp
  • Chilli flakes ½ tsp
  • Cumin seeds ½ tsp
  • Cream ½ Cup
  • Coriander leaves

Step 1

In a blender, add onions, garlic and ginger, green chillies, coriander leaves, and tomato. Blend to a smooth paste. Set it aside.

Step 2

Take 5-6 boiled eggs. By using a fork, make marks on each egg. In a pan, add oil for frying. Fry them until light golden brown. Once done, set them aside.

Step 3

Now on a griddle, add the prepared mixture in the same oil in which you have fried eggs. Cook the onion tomato mixture for 4-5 minutes until a little dry.

Step 4

After that, add some spices. Add salt, chilli powder, turmeric powder, coriander powder, chilli flakes, cumin seeds. Give it a good mix. Cook for another 2-3 minutes.

Step 5

Now add fresh cream for smooth gravy. Cook for 2-3 minutes. Finally add fried eggs. Cut them by half if you want to.

Step 6

Add a little coriander leaves and serve.
