Ingredients
- 2 large eggs
- 1/4 cup (50g) brown sugar
- 1/4 cup (50g) white sugar
- 1 tsp (5ml) vanilla essence
- 1/2 cup (60g) all-purpose flour
- 1/4 cup (30g) cocoa powder
- 1 tsp (5g) baking powder
- 1/4 tsp (1g) salt
- 250g dark chocolate, chopped
- 95g unsalted butter, softened
Step 1
Preheat the oven to 180°C (350°F). Line a square baking tin with parchment paper.
Step 2
In a large mixing bowl, whisk together eggs, brown sugar, white sugar, and vanilla essence until light and fluffy, approximately 3-4 minutes.

In a separate bowl, sift together flour, cocoa powder, baking powder, and salt.

Gradually add the dry ingredients to the egg mixture and fold until just combined.

In a separate bowl, melt chocolate and butter in the microwave in 30-second increments, stirring between each interval, until smooth.

Fold the chocolate mixture into the egg mixture until fully incorporated.
Step 7
Pour the batter into the prepared baking tin and smooth the top.
Step 8
Bake for 15-20 minutes or until a toothpick inserted 2 inches from the edge comes out clean, and the center is still slightly tender.
Step 9
Remove from the oven and allow to cool completely in the tin before cutting into equal-sized brownies.
