Chickpea Protein Salad

This vibrant high-protein chickpea salad combines the nutty goodness of chickpeas, crisp vegetables, and a zesty dressing, creating a nutritious and satisfying dish perfect for a wholesome meal or side.

Ingredients

  • Boiled Chickpea 1 cup
  • 2 Diced Cucumbers
  • 1 Diced Tomato
  • ½ Diced Yard-long cucumber
  • 1 onion
  • Olive Oil 2 tbsp
  • Lemon juice 4 tbsp
  • Salt ½ tsp
  • Pepper ½ tsp
  • Chilli flakes ½ tsp
  • Coriander Leaves 1 tbsp

Step 1

In a bowl, add boiled chickpea, diced cucumbers, diced Tomato, diced Yard-long cucumber, onion.

Step 2

In a small bowl, add oil, lemon juice, some salt, pepper and chilli flakes. Add coriander leaves And give it a good mix.

Step 3

Add this dressing on diced vegetables. Mix it together.
