Chicken and Vegetable Stir-Fry Pasta

This vibrant stir-fried pasta dish features tender chicken, colorful vegetables, and a savory sauce, all tossed together for a quick and satisfying meal bursting with flavor and texture.

Ingredients

  • 2 cups Mixed pasta (Penny pasta, Rigatoni pasta, Elbow pasta)
  • 1 tbsp Salt
  • 2 tbsp Oil
  • 1/2 cup Oil
  • 1 tbsp Garlic, chopped
  • 1 small Onion, chopped
  • 750g Chicken, cut into strips
  • 1 tsp Salt
  • 1 tsp Chilli flakes
  • 1/2 tsp Cumin powder
  • 1 tsp Pepper
  • 2 tbsp Carrot
  • 1/2 cup Capsicum (red, green, yellow)
  • 1/2 cup Cabbage
  • 1 tbsp Vinegar
  • 1 tbsp Soy sauce
  • 1 tbsp Chilli sauce
  • Coriander leaves for garnishing

Step 1

Cooking Pasta: In a large pot, bring water to a boil with salt and oil. Add mixed pasta and cook until 90% done. Drain and rinse with cold water to stop the cooking process.

Step 2

Preparing Chicken and Vegetables: In a large pan, heat oil and sauté garlic and onion for 1-2 minutes. Add chicken strips and cook until colour changes to white (5-7 minutes). Season with salt, chilli flakes, cumin powder, and pepper.

Step 3

Stir-Frying: Add carrot, capsicum, and cabbage. Cook for 1-2 minutes, stirring continuously. Add cooked pasta, vinegar, soy sauce, and chilli sauce. Mix well.

Step 4

Serving: Serve hot, garnished with coriander leaves.
