Step 1
In a saucepan, bring broth and brown rice to a boil. Once boiling, lower the heat to medium-low, cover, and let it simmer until the rice is tender and has absorbed all the liquid, which usually takes around 45 to 50 minutes.
Step 2
Meanwhile, in a large saucepan over medium heat, melt butter. Stir in onion, celery, carrot, and almonds, cooking them until the onion starts to soften, which typically takes 5 to 10 minutes. Toss in mushrooms and sauté for an additional minute, then season with salt to taste.
Step 3
Combine the cooked rice with the onion mixture until everything is well mixed. Integrate kale into the mixture and cook until it wilts entirely, approximately 5 minutes. Serve the dish warm and enjoy!
