Step 1
In a medium saucepan over medium-high heat, mix together the vibrant rhubarb, refreshing water, and a pinch of salt. Let this delightful combination come to a gentle boil, giving it an occasional stir. Lower the heat to a cozy medium-low and let it simmer, stirring now and then until the rhubarb softens, for about 6 to 8 minutes. Next, add in a touch of honey and stir until the mixture starts to thicken beautifully, which should take around 2 to 3 minutes. Take the pan off the heat and set it aside to cool.
Step 2
Now, prepare your jars - grab five 12- to 16-ounce jars and line them up like a colorful rainbow. Start by spooning 2 tablespoons of the rhubarb concoction into the base of each jar. Follow this with a sprinkle of 2 tablespoons of cracker crumbs and a generous layer of 2/3 cup of creamy yogurt in each jar. Divide the remaining rhubarb mix and cracker crumbs among the jars, creating layers of goodness. Finish off each parfait by sprinkling 1 tablespoon of crushed walnuts on top. Seal the jars with care and pop them into the fridge to chill until you're ready to enjoy these delicious treats.
