- 1 cup of creamy cottage cheese
- 1 cup of softened butter
- 2 cups of versatile all-purpose flour
- ¼ cup of butter at room temperature
- ¾ cup of rich brown sugar
- ¼ teaspoon of fragrant ground cinnamon
- ¾ cup of finely chopped pecans
- ½ cup of plump raisins (Optional)
- 3 tablespoons of tangy orange marmalade (Optional)
- 1 egg white
- 2 tablespoons of crisp water
Step 1
Mix cottage cheese and butter together in a bowl until well combined. Slowly add in the flour to form a sticky dough. Divide the dough into three parts, wrap each in waxed paper, and chill in the refrigerator for a minimum of 2 hours to set.
Step 2
To start preparing the oven, preheat it to 400 degrees F (200 degrees C) and grease a baking sheet lightly. In a separate bowl, combine the remaining butter with brown sugar, cinnamon, pecans, and raisins to create a flavorful mixture. Keep it aside for later use.
Step 3
Take one portion of the dough at a time and roll it out into a 9-inch circle on a floured surface, ensuring to keep the rest of the dough cool in the fridge. Spread a tablespoon of orange marmalade, if desired, over the circle, then gently press in a third of the nut mixture. Cut the circle into 16 wedges and roll each wedge tightly from the wider end. Place the rolled cookies on the baking sheet with the pointed side down. Repeat this process with the remaining dough.
Step 4
In a small bowl, beat the egg white with water and brush this mixture onto each cookie before baking. Bake in the preheated oven for about 18 to 20 minutes until the cookies turn golden brown and delicious.
