Ingredients
- 3/4 cup of rich brown sugar
- 1/2 cup of softened butter
- 1 large egg
- 1 tsp of fragrant vanilla essence
- 1 and 3/4 cups of wholesome spelt flour, with the option for more if required
- 1 tsp of baking soda
- 1/2 tsp of salt
- 1/2 cup of luscious chocolate chips, if desired
- 1/2 cup of finely chopped pecans, if preferred
Step 1
Position one oven rack on the lowest level and another on a higher level before preheating the oven to 375 degrees F (190 degrees C).
Step 2
In a bowl, use an electric mixer to combine brown sugar, butter, egg, and vanilla extract until the mixture is creamy. In another bowl, mix flour, baking soda, and salt together. Gradually incorporate the flour mixture into the brown sugar mixture until fully combined. Gently fold in chocolate chips and pecans for added flavor and texture.
Step 3
Using a spoon, drop small portions of the dough onto a baking sheet.
Step 4
Bake the cookies in the preheated oven on the lower rack for 5 minutes, then move the baking sheet to the upper rack and continue baking until the edges turn a light golden brown, approximately 5 more minutes.
