Step 1
Begin by soaking the mung beans in water overnight in the refrigerator. The following day, discard the water and keep the beans aside.
Step 2
In a large mixing bowl, blend together the mung beans, rice flour, cumin seeds, chopped green chile, asafoetida, fresh cilantro, coconut flakes, shredded carrot, and salt. Slowly pour in the water, kneading the mixture with your hands until a smooth dough is formed. Adjust the water quantity as necessary, approximately around 1/2 cup.
Step 3
Shape the dough into tennis ball-sized portions and set them apart. Flatten a piece of dough into a thin round shape.
Step 4
Heat up 2 tablespoons of vegetable oil in a skillet over medium heat. Add the dough round to the oil and fry until it turns a lovely golden brown color, which usually takes about 30 to 40 seconds. Flip it over and fry until the other side is golden as well. Repeat the process with the remaining dough, adding 2 tablespoons of oil for each rotti. Serve the rottis hot and enjoy this delicious dish!
