- A bag of Peruano beans, weighing 16 ounces
- 3 quarts of water, adjust as necessary
- A halved onion
- 3 cloves of garlic
- 2 tablespoons of chicken bouillon (like Knorr®)
- Season with salt and freshly ground black pepper
- ¼ cup of canola oil
Step 1
Prepare your beans by giving them a refreshing rinse under cold water. Place them in a bowl and generously cover them with water, allowing them to soak and soften for around 30 minutes to an hour.
Step 2
Once your beans have soaked, transfer them to a spacious pot and fill it with approximately 3 quarts of water. Toss in some onion and garlic for flavor. Cover the pot and let it simmer over low heat until it reaches a gentle boil, which should take about 30 minutes. Stir in some bouillon and season with a pinch of salt. Continue cooking, occasionally adding more water as necessary, until the beans reach a tender consistency, which typically takes an additional 30 to 40 minutes.
Step 3
In a separate skillet, warm up some oil over medium heat. Scoop out a portion of the cooked beans and combine them with a clove of garlic from the pot and roughly half of the water used for boiling. Let the mixture simmer and then mash it together to create a flavorful bean mash. Season it with a touch of salt and pepper to taste. Enjoy this delicious and nutritious dish!
