- Slices of red bell pepper, about 1 cup
- 2 chicken breasts, cooked and cubed into 1-inch pieces
- Crushed peanuts, if desired, around ¼ cup
- Fresh cilantro, chopped, optional, approximately ¼ cup

Mix cornstarch and water in a small bowl until the mixture is smooth and velvety. In a large pot, pour in the chicken broth and blend in the cornstarch mixture, soy sauce, fish sauce, rice vinegar, chile-garlic sauce, vegetable oil, ginger, garlic, and coriander.
