Ingredients
- Drizzle of olive oil
- Fresh green onions, finely chopped
- Piles of tender baby spinach, two packs
- Splashes of water, three parts
- Nests of ramen noodles (discard flavor packets), two packs
- Batch of large eggs, seven in all
- Dollop of garlic-and-herb spreadable cheese (e.g. Alouette®), about ¾ cup
- Pinch of salt
- Sprinkle of grated Parmesan cheese, around ¼ cup
Step 1
Start by preheating the oven to 375 degrees F (190 degrees C) for a perfect baking temperature. In a 10-inch ovenproof skillet with a lid, heat some oil over medium heat, allowing it to sizzle and perfume the kitchen. Sauté the green onions until they become soft and fragrant, taking around 2 minutes. Next, add a package of spinach along with a splash of water and cover the skillet to let it wilt gently for about a minute. Give the spinach a good toss with tongs before adding the second package of spinach and a bit more water. Continue cooking covered, giving it an occasional stir, until the spinach turns tender and vibrant, which should take about 2 minutes. Once done, set the skillet aside to cool slightly.
Step 2
While the spinach mixture is resting, get a saucepan of salted water boiling on the stove. Break apart the ramen noodle blocks into quarters and cook them in the boiling water until they reach a delightful tenderness, which usually takes around 3 minutes. Drain the noodles in a colander and rinse them under cold water to stop the cooking process. Combine the noodles with the spinach mixture in the skillet, making sure to spread it out evenly across the pan.
Step 3
In a blender, whip up a mixture of eggs, creamy spreadable cheese, and a pinch of salt until it becomes a smooth and velvety concoction. Pour this delightful blend over the spinach and noodles in the skillet, ensuring it seeps into all the nooks and crannies. Give everything a gentle stir with a fork to create a beautiful marbling effect before sprinkling the top with a generous amount of Parmesan cheese.
Step 4
Now, carefully transfer the loaded skillet into the preheated oven and let it bake until the dish puffs slightly and a toothpick inserted into the center comes out clean, which should take roughly 35 minutes. Once perfectly cooked, slice the creation into 4 wedges and serve directly from the skillet for a rustic and charming presentation.
Extra Tips & Suggestions
- 1. Keep your fresh spinach in a clean, breathable bag or container in the fridge to maintain its crispness and flavor.
- 2. Store your ramen noodles in a cool, dry place away from direct sunlight to prevent them from becoming stale.
- 3. For your leftover cheese, wrap it in wax paper before placing it in a resealable bag to maintain its moisture and prevent it from getting moldy.
