- Cut 1 orange bell pepper into 1-inch pieces
- Have 5 storage containers of 3 cups each
- Sprinkle in ¼ cup of grated Parmesan cheese, or to your liking

To begin, preheat your oven to a toasty 400 degrees Fahrenheit (200 degrees Celsius) for that perfect cooking temperature. Take a generously sized 12x17-inch baking sheet, line it with aluminum foil, and give it a nice coating of cooking spray to prevent sticking.

In a medium saucepan, heat up a tablespoon of oil over medium-high heat. Toss in the brown rice and let it sizzle for a couple of minutes until it starts to get a bit of color. Pour in some water, add a pinch of salt, cover it up, and let it simmer gently over medium-low heat until all the water is absorbed, typically around 20 to 30 minutes.
Step 3
While the rice is doing its thing, arrange your sausages on one side of the baking sheet, followed by the onions and then the Brussels sprouts. Sprinkle a dash of garlic powder, salt, and pepper over the veggies, and drizzle about 1 1/2 tablespoons of oil on top. Give everything a good toss to ensure everything is nicely coated.
Step 4
Pop the baking sheet into the preheated oven and let it roast for 10 minutes. Once done, take it out, stir the veggies, flip the sausages, add the bell peppers to the mix, and drizzle the remaining 1/2 tablespoon of olive oil. Season with a touch more salt and pepper, toss it all together, and let it bake for another 10 minutes. Allow it to cool slightly before proceeding.

Now, slice up the sausages into bite-sized pieces. Divide the cooked brown rice, roasted veggies, and sausage bits among five containers. Finish it off with a sprinkle of Parmesan cheese for that extra flavor boost. Enjoy your delicious and nutritious meal prep!
