- 10 husked and rinsed tomatillos
- 2 sliced fresh jalapeno peppers
- A generous ⅓ cup of chopped cilantro
- 3 crushed garlic cloves

- Around ¾ pound of shredded cooked chicken breast
- Thinly sliced ½ red onion
- A handful of sliced black olives
- 2 tablespoons of fresh cilantro leaves
- One package (8 ounces) of tortilla chips
- Sprinkle of crumbled cotija cheese, to your liking

Begin by placing the tomatillos in a saucepan and covering them with water. Bring the mixture to a boil and then lower the heat to a simmer. Let them cook until they become softer and their color lightens, which should take about 10 to 15 minutes.

Once the tomatillos are ready, transfer them to a food processor or blender. Add in the jalapenos, a generous amount of cilantro, garlic, salt, and pepper. Blend everything together until you achieve a smooth consistency. For the best flavor, cover the mixture with plastic wrap and let it chill in the refrigerator for at least 2 hours.

While the salsa is marinating, preheat your oven to 400 degrees F (200 degrees C). In a skillet, heat up some oil over medium heat. Cook the chicken and onion together until the onions start to caramelize, which should take around 10 minutes. Toss in some olives and continue cooking for an additional 5 minutes. Add more cilantro and cook until it wilts, usually about a minute. Once done, remove the skillet from the heat.
Step 4
To assemble the dish, line the base of an 8-inch square casserole dish with a couple of layers of tortilla chips, breaking them slightly for texture. Pour half of the prepared salsa over the chips and toss gently to coat. Top this with the cooked chicken mixture and then the remaining salsa. Finish off by sprinkling a generous amount of cotija cheese on top.

Bake the assembled casserole in the preheated oven until the tortilla chips soften, which should take between 15 to 25 minutes. Enjoy your flavorful and aromatic dish!
