- Salsa (½ cup)
- Sliced Kalamata olives (¼ cup)
Step 1
To begin, preheat your oven to 350 degrees F (175 degrees C) and get your casserole dish ready by greasing it with cooking spray.
Step 2
In a skillet over medium-high heat, warm up some olive oil. Sauté the onion and garlic in the fragrant oil until the onion turns tender, which should take approximately 5 minutes. Next, add the ground beef and cook it while breaking it into small pieces using a wooden spoon until the beef is thoroughly browned, which typically takes 5 to 7 minutes. Flavor this beefy mixture with the taco seasoning mix.
Step 3
Combine the seasoned beef with rice, a variety of colorful vegetables, kidney beans, a cup of Cheddar cheese, salsa, and olives in the prepared casserole dish. Top this delightful mixture with the remaining cheese for an extra cheesy kick.
