Ingredients
- 1 package of frozen bite-size potato nuggets (like Tater Tots®), weighing 32 ounces
- 1 pound of lean ground beef
- 3/4 cup of water
- 1 packet of taco seasoning mix, weighing 1 ounce

Step 1
To start off, preheat your oven to a toasty 400 degrees F (200 degrees C). Get your potato nuggets ready by laying them out on a baking sheet, giving them space to crisp up nicely.
Step 2
While those nuggets are getting golden and crispy in the oven (around 22 to 24 minutes), let's work on the tasty beef topping. Heat up a large skillet over medium-high heat and cook your beef until it's browned and crumbly, which should take around 5 to 7 minutes. Once it's looking good, add some water and taco seasoning, letting it all come to a delicious boil. Then, reduce the heat and let it simmer until the liquid reduces, which usually takes about 5 minutes.
Step 3
Now, it's time to get that broiler going. Adjust your oven rack so it's about 6 inches from the heat source and let it preheat. Once that's ready, grab an oven-proof platter and arrange your potato nuggets on it. Top them generously with the beef mixture and sprinkle a mix of Mexican cheese and pepperjack cheese over everything.

Slide the platter under the broiler and let the cheese melt to ooey-gooey perfection, which should only take 1 to 3 minutes. In the meantime, whip up a zesty sour cream and lime juice mixture in a bowl.
