Ingredients
- 1 lb of ground beef

- 1 can (11 oz) of Mexican-style corn, drained
Step 1
Combine ground beef, oregano, parsley, and salt in a mixing bowl, ensuring an even distribution of flavors.
Step 2
In a separate pot, bring rice and water to a boil, then cover and let it simmer gently for 20 minutes to achieve a fluffy texture.
Step 3
Meanwhile, in a skillet over medium heat, heat oil and sauté minced onion and garlic until fragrant. Add this aromatic mixture to the seasoned beef and shape it into 24 small, flavorful meatballs.

Brown the meatballs in the skillet until they develop a delicious crust on all sides. Once cooked, set them aside and in the same skillet, cook another batch of minced onion and garlic until soft. Introduce tomato puree, bay leaf, vinegar, oregano, parsley, chili powder, brown sugar, cumin, salt, and pepper to create a rich, aromatic sauce. Let it simmer and thicken for approximately 20 minutes before reuniting the meatballs with the sauce. Cook them together until the meatballs are cooked through.

As the rice finishes cooking, mix in some sweet corn for added texture and flavor. Plate the meatballs and savory sauce over the fluffy rice for a satisfying and flavorful meal.
