Ingredients
- 1/2 cup of creamy butter
- A generous cup of rich brown sugar
- A pair of farm-fresh eggs
- 2 teaspoons of fragrant vanilla essence
- 1/2 cup of nourishing vegetable oil
- A luscious 1/2 cup of golden honey
- 3 cups of hearty oats
- 2 1/2 cups of wholesome whole wheat flour
- 1/2 cup of finely ground flaxseed
- A sprinkle of toasty sesame seeds
- A dash of tiny poppy seeds
- A handful of nutty flax seeds
- Just a pinch of baking soda
- 1 1/2 teaspoons of warm cinnamon powder
- 1 cup of plump raisins
Step 1
To start, preheat the oven to 350 degrees F (175 degrees C) and don't forget to lightly grease 4 baking sheets for easy cleanup later on.
Step 2
In a large bowl, use an electric mixer to beat together butter and sugar until the mixture is smooth and creamy. Add the first egg and blend it into the butter mixture completely. Next, incorporate the second egg along with a splash of vanilla extract, making sure to continue beating the mixture as you go. While still beating, gradually add in some vegetable oil, a touch of honey, oats, whole wheat flour, ground flaxseed, sesame seeds, poppy seeds, more flaxseed, baking soda, and a hint of ground cinnamon, in that order. Once all the ingredients are mixed in, gently fold in the raisins to add a burst of sweetness to the dough.
Step 3
Using a 1/4 cup measuring cup, scoop out the dough to create monster cookie-sized portions and drop them onto the prepared baking sheets, giving them enough room to spread while baking.
Step 4
Pop the baking sheets into the preheated oven and keep an eye on the cookies as they bake. You'll know they're done when the edges start to turn a lovely golden brown, usually around 20 minutes or so. Enjoy your freshly baked cookies!
