Step 1
In a small mixing bowl, combine creamy mayonnaise, tangy sour cream, fresh cilantro, aromatic green onions, smoky chipotle chili powder, zesty lime juice, garlic basil spread, and warm cumin. Toss in a touch of brown sugar and more chili powder, continuing to cook until the liquid has evaporated, and the sauce has thickened, for about 10 more minutes.

To finish, sprinkle a handful of fresh cilantro and squeeze the juice of a lime over the savory chorizo blend before removing it from the heat.

Prepare the hoagie buns by spreading a dollop of the chipotle mayo on each. Divvy up the flavorful chorizo mixture evenly among the 4 sandwiches.
Step 6
In a nonstick skillet over medium heat, add another drizzle of olive oil. Fry the eggs, a few at a time, until the whites are set but the yolks remain delightfully runny, about 2 minutes per side. Top each sandwich with two eggs before serving.
