Step 1
Prepare your small slow cooker by spraying a light coat of cooking spray inside. In a large bowl, combine oats, half a cup of brown sugar, a sprinkle of cinnamon, and a dash of nutmeg. Add the pumpkin and gradually mix in water and half-and-half. Toss in some raisins and a touch of vanilla extract for extra flavor.
Step 2
Transfer the oat mixture into the slow cooker using a ladle. Let it cook on Low heat until the oats are tender and creamy, which should take around 7 and a half to 8 and a half hours.
Step 3
Once ready, garnish the oatmeal with 2 tablespoons and 2 teaspoons of brown sugar, along with 5 tablespoons and 1 teaspoon of chopped walnuts for a delightful crunch.
