Ingredients
- Prepare Dumpling Filling: Minced Chicken 350g
- Spring onion chopped 2 tbsp
- Ginger chopped 1 tbsp
- Garlic chopped 1 tbsp
- Carrot finely chopped 2 tbsp
- Cabbage 2 tbsp
- Salt 1 tsp or to taste
- Cornflour 2 tbsp
- Black pepper powder 1 tsp
- Soy sauce 2 tbsp
- Coriander Leaves 1 tbsp
- Prepare Dough: All-purpose flour sifted 2 Cups
- Water as required
- Salt 1 tsp or to taste
- Prepare Chilli Oil: Cooking oil 1 Cup
- Onion 1 small size
- Garlic sliced 2 cloves
- Star anise 1
- Cinnamon sticks 2
- Red chili crushed 3 tbs
- Salt 1 tbsp or to taste
- Prepare Dipping Sauce: Garlic chopped 2 tsp
- Spring onion chopped 2 tbs
- Vinegar 2 tbsp
- Soy sauce 2 tbsp
- Chili Oil 2 tbsp
Step 1
Prepare Dumpling Filling: In a bowl,add chicken mince,spring onion,ginger,garlic,carrot,cornflour,pink salt,cornflour,black pepper powder, soy sauce and add coriander leaves,mix until well combined & set aside.
Step 2
Prepare Dough:In a bowl,add all-purpose flour.In water,add pink salt & mix well until it dissolves.
Step 3
Knead until hard dough is formed.
Step 4
Knead dough for 2-3 minutes,cover with cling film & let it rest for 30 minutes.
Step 5
Remove cling film,with wet hands knead dough for 2-3 minutes,cover with cling film & let it rest for 15 minutes.
Step 6
Take a dough (20g),make a ball & roll out with the help of a rolling pin (4-inches).
Step 7
Use cornflour for dusting to avoid stickiness.
Step 8
Add prepared filling,apply water on the edges,bring the edges together & press to seal the edges to make a dumpling (makes 22-24).
Step 9
In a wok,add water & bring it to boil.
Step 10
Place prepared dumplings,cover & steam cook on low flame for 20-25 minutes.
Step 11
Prepare Chilli Oil:In a saucepan,add cooking oil & heat it.
Step 12
Add onion,garlic,star anise,cinnamon sticks & fry until light golden.
Step 13
In a bowl,add red chili crushed,salt,add strained hot oil & mix well.

In a bowl,add garlic,spring onion,prepared chili oil,vinegar,soy sauce & mix well.

On dumplings,add prepared chili oil,dipping sauce,green onion leaves & serve!
