Ingredients
- 1 fresh ear of corn, without husk
- 1 ripe avocado, cut into small pieces

- ¼ cup of black beans, washed and drained

- 2 tilapia fillets
- 1 teaspoon of Cajun seasoning blend
- 1 tablespoon of salted butter
- 1 teaspoon of chicken broth, or more if needed
- ¼ cup of rich and creamy heavy cream
Step 1
Prepare the grill by preheating it to high heat and lightly oiling the grate for a perfect sear. Next, place the corn on the grill and cook it, ensuring to turn it frequently until it's beautifully charred all over, which should take around 10 minutes. Once done, transfer the corn to a plate and let it cool before removing the kernels with ease.

In a spacious bowl, mix together the corn kernels, creamy avocado, juicy tomato, hearty black beans, zesty red onion, fresh cilantro, and spicy jalapeno. Add a fresh squeeze of lime and season with a pinch of salt and pepper. Let the flavors meld together by chilling the mixture in the refrigerator for approximately 30 minutes.
Step 3
While the salsa chills, season both sides of the tilapia with aromatic Cajun seasoning. In a sturdy stainless steel skillet, melt butter over medium-high heat until it's just about to brown. Place the seasoned tilapia in the skillet and cook for a couple of minutes on each side until it's perfectly cooked through and easily flakes with a fork. Baste the fish with the butter in the skillet for an extra burst of flavor.

After removing the fish from the skillet, pour in some chicken broth to deglaze the pan, scraping up all those delicious browned bits with a wooden spoon. Whisk in some cream, squeeze in another lime wedge, and adjust the tanginess to your liking. Simmer the sauce until it thickens slightly, then take it off the heat.

To serve, plate the cooked fish alongside the chilled salsa. For an extra indulgent touch, drizzle some of the creamy sauce over both the fish and the salsa. Enjoy this flavorful and satisfying dish!
