Ingredients
- 1 tbsp of black tea leaves
- 2 cinnamon sticks measuring 3 inches each
- 4 whole star anise pods
- 1 tbsp of five-spice powder
- 6 cloves whole
- 1 slice of fresh ginger root
- ½ tsp of Szechuan peppercorns
- 1 tsp of licorice root
- 1 piece of dried mandarin orange peel
- 1 oz of Chinese rock sugar
- ½ cup of dark soy sauce
- ⅓ cup of light-colored soy sauce
- 10 hard-boiled eggs
Step 1
In a spacious saucepan, combine tea, cinnamon, star anise, five-spice, cloves, ginger, peppercorns, licorice, orange peel, rock sugar, dark soy sauce, and light soy sauce. Allow the mixture to come to a boil, then lower the heat to a gentle simmer for about 15 minutes. While waiting, gently tap the hard-cooked eggs to create cracks all around, enabling the soy sauce to seep in and give the egg whites a delightful hue.
Step 2
Gently place the cracked eggs into the fragrant liquid and let them cook for approximately 30 minutes. Once cooked, remove the saucepan from the heat and allow the eggs to steep in the liquid for a restful 2 hours off the stove. After the resting period, drain the eggs, cool them down, and then delicately peel off the shells for a savory treat.
