Ingredients
- 4 cups of water, or more if necessary,
- A quarter cup of apple cider vinegar,
- A tablespoon of seafood seasoning (like Old Bay®),
- A tablespoon of olive oil,
- A bunch of collard greens, trimmed and sliced into 2-inch strips,
- Two small jalapeno peppers, finely diced,
- Three cloves of garlic, halved lengthwise, or adjust to your preference,
- Salt and freshly ground black pepper to your liking.
Step 1
In a big stockpot, pour water halfway and toss in a splash of vinegar, seafood seasoning, and a drizzle of olive oil. Let the mixture come to a rolling boil.
Step 2
Next, throw in some collard greens, spicy jalapeno peppers, and fragrant garlic into the bubbling water. Bring it back to a boil, then cover the pot, lower the heat to a gentle simmer, and let it cook until the greens are super soft, which should take around 3 to 4 hours.

Once the greens are done, drain off the cooking water and squish up the garlic cloves. Season the greens with a generous pinch of salt and pepper for a flavorful finish.
