Step 1
Combine milk, flour, eggs, melted butter, and a pinch of salt in a blender, blending until the mixture is smooth. Allow the blend to sit for 15 minutes to let the flavors meld.

In a large nonstick skillet, warm it up over medium heat, then lightly grease it with cooking spray. Pour in a half cup of the batter and swirl the skillet around to ensure an even coating. Cook until the bottom turns a lovely golden brown, usually around 2 to 3 minutes. Use a rubber spatula to gently release the edges, then skillfully flip the crepe with your fingers. Cook for an additional minute before removing the crepe from the skillet.
Step 3
Continue the process with the remaining batter, remembering to spray the skillet each time before adding more batter. As you finish cooking each crepe, stack them on top of one another to keep them warm.

In a separate skillet, melt a bit of butter over medium-high heat. Sauté the spinach and shallots until they are tender, usually around 3 minutes. Add the chicken and stir everything together until heated through, which should take 3 to 4 minutes. Remove the skillet from the heat.

Spread a generous 2 tablespoons of Brie cheese onto each crepe, then spoon the chicken mixture on top. Fold the crepe in half, return it to the skillet, and cook until the cheese is gooey and melted. Once ready, gently take the crepe out of the skillet and roll it into a delightful cone shape. Enjoy your delicious creation!
