Ingredients
- Dough:
- 1 cup of vibrant red lentils
- 2 teaspoons of oil
- 1 whole onion, cut into quarters
- 3 cloves of peeled garlic

- 1 cup of creamy yogurt
- 4 teaspoons of zesty lemon juice
- 1 tablespoon of rich tahini

- Toppings:
- 3/4 cup of shredded Cheddar cheese
- 1 ripe tomato, cubed
- 1/4 cup of sliced olives
- 1 tablespoon of freshly minced parsley
- 2 teaspoons of finely chopped green onion
Step 1
In a bowl, place red lentils and cover them with water, allowing them to soak for approximately 2 hours until they soften. Once ready, drain the lentils.
Step 2
Preheat the oven to 350 degrees F (175 degrees C). Prepare a baking sheet by lining it with parchment paper and greasing it with 2 teaspoons of oil.
Step 3
Combine the soaked lentils in a food processor with onion, garlic, a half bunch of parsley, cilantro, and a quarter cup of green onions. Pulse the mixture until finely ground.
Step 4
Transfer the lentil blend to a spacious bowl. Mix in 1/3 cup of oil, an egg, baking powder, black pepper, chile powder, cumin, coriander, and salt until thoroughly combined. Spread the dough to a thickness of 1/4 inch on the prepared baking sheet.

Bake the dough in the preheated oven until it turns golden and firm, typically around 15 minutes. Once baked, remove it from the oven.
Step 6
Prepare a sauce by mixing yogurt, lemon juice, tahini, and salt in a small bowl until it reaches a smooth consistency.
Step 7
On top of the baked dough, layer the sauce, Cheddar cheese, tomato, olives, a tablespoon of parsley, and two teaspoons of green onion.
Step 8
Return the baking sheet to the oven and bake until the cheese has melted, approximately 5 minutes.
