- Five strips of bacon
- A can of black beans (14 ounces)
- Two teaspoons of taco seasoning mix (divided)
- A drizzle of vegetable oil
- Five soft flour tortillas
- Two diced tomatoes
- A chopped green bell pepper
- A generous sprinkle of shredded Cheddar cheese
Step 1
In a saucepan, bring water and rice to a gentle boil. Let it simmer over medium-low heat, covered, until the rice turns tender and absorbs all the liquid, which usually takes around 20 to 25 minutes.

Next, take a large skillet and place the bacon in it. Cook the bacon on medium-high heat, turning it occasionally until it becomes crispy and evenly browned, which should take approximately 10 minutes. Once done, set the bacon slices on paper towels to drain, while keeping the flavorful drippings in the skillet. Crumble the bacon into bits.

Meanwhile, preheat your oven to 250 degrees F (120 degrees C).

In a separate saucepan, mix the beans with a teaspoon of taco seasoning over low heat. Stir and cook until the beans are warmed through, which usually takes about 5 minutes.

Once the rice is cooked, stir it in the reserved bacon drippings along with a teaspoon of taco seasoning. Make sure the rice gets evenly coated with the flavors, which should take around 2 to 3 minutes.

Then, lightly brush each tortilla with vegetable oil and place them on a baking sheet. Bake the tortillas in the preheated oven for about 5 minutes until they are warmed and slightly crisp.

For serving, set up separate bowls with the black bean mixture, rice mixture, crumbled bacon, diced tomatoes, sliced green bell peppers, and shredded Cheddar cheese. Enjoy these delicious components with the warm tortillas for a delightful meal.
