Ingredients
- Four zucchinis, sliced lengthwise and deseeded
- One pound of ground turkey
- A packet of taco seasoning weighing 1.25 ounces
- Approximately three-fourths of a cup of water, or more if necessary
- Two red bell peppers, finely diced

- Half a white onion, finely chopped
- A quarter cup of freshly chopped cilantro
- One cup of sour cream
- A packet of sour cream seasoning mix weighing one ounce (like Old El Paso® Zesty Sour Cream Seasoning Mix)
- A bunch of green onions, chopped
- Half a cup of shredded Muenster cheese
- Half a cup of shredded Cheddar cheese
Step 1
Start by preheating your oven to 400 degrees Fahrenheit (200 degrees Celsius) and greasing the bottom of a 13x9-inch baking dish to prevent sticking.
Step 2
Next, bring a large pot of water to a rolling boil. Gently cook the zucchini halves in the boiling water for just about a minute to slightly soften them. Once done, carefully remove the zucchini halves from the water and arrange them in the prepared baking dish, ensuring the cut sides are facing upwards for easy filling later.

In a large skillet over medium-high heat, brown and crumble the ground turkey until cooked through, approximately 5 to 7 minutes. Drain any excess grease from the skillet.

Return the skillet to the heat and add water to the cooked turkey along with taco seasoning. Allow the mixture to simmer until the liquid thickens and coats the turkey, roughly 5 minutes. Stir in red peppers, diced tomatoes, green chiles, onion, and cilantro, cooking until the peppers have softened, about 5 minutes more.

In a separate bowl, combine sour cream with the sour cream seasoning mix for an extra burst of flavor.

Now, using a slotted spoon, fill the hollowed-out zucchini halves with the flavorful turkey mixture, pressing it down gently. Top the turkey filling with approximately half of the seasoned sour cream mixture. Sprinkle a generous amount of green onions, Muenster cheese, and Cheddar cheese over the sour cream layer for added richness.

Place the baking dish in the preheated oven and bake until the cheese is perfectly melted and the zucchini is tender, usually around 30 minutes. Once done, finish off by drizzling the remaining sour cream mixture over the top for a creamy finish. Enjoy this flavorful and satisfying dish!
