Ingredients
- 4 chicken breast halves without skin or bones
- 1 papaya, peeled, seeded, and thinly sliced
- A pinch of ground cinnamon to your liking
- ⅓ cup of melted margarine
- 1 cup of crushed buttery round crackers like Ritz®
- 1 tablespoon of margarine
- 1 cup of fragrant basmati rice
- 1 ½ cups of water
- 1 tablespoon of margarine
- 1 cup of freshly squeezed orange juice
- 1 can (8 ounces) of crushed pineapple in its own juice
- 1 tablespoon of brown sugar
- ½ teaspoon of ground cinnamon
- 1 teaspoon of ground nutmeg
- A pinch of cayenne pepper
- A pinch of salt and freshly ground black pepper to taste.
Step 1
Begin by preheating the oven to 350 degrees F (175 degrees C) and preparing a baking sheet with aluminum foil.
Step 2
Lay the chicken breasts flat on your work surface and carefully make a pocket in each one using a sharp knife, creating a 2-inch slit on the side. Stuff the pockets with papaya slices, sprinkling them with a touch of cinnamon. Dip the chicken in melted margarine, followed by cracker crumbs.
Step 3
In a skillet, heat margarine over medium-high heat and brown the chicken breasts for about 10 minutes on each side. Transfer the browned chicken breasts to the prepared baking sheet.
Step 4
Bake in the preheated oven for 20 minutes before flipping the chicken breasts and baking for an additional 20 minutes or until they are cooked through. Ensure they reach an internal temperature of 165 degrees F (74 degrees C).
Step 5
In a separate saucepan, bring rice and water to a boil, then let it simmer covered over medium-low heat for 20-25 minutes until the rice is tender and the liquid is absorbed.
Step 6
Using the same skillet, melt the remaining margarine over medium-high heat and deglaze it with orange juice. Add pineapple, brown sugar, cinnamon, nutmeg, cayenne, salt, and pepper. Simmer until the sauce is reduced and thickened, then serve it over the chicken breasts and rice.
