Step 1
In a large skillet over medium heat, warm up 2 tablespoons of olive oil. Let the diced onion sizzle in the oil until it starts to soften, which should take about 3 minutes. Next, sprinkle brown sugar over the onion and stir until the sugar melts into the mix, around 1 minute. Now, add in the juicy mango, sweet pineapple chunks, and a splash of red wine. Let everything simmer together until it's steaming hot, usually 3 to 5 minutes. Once done, transfer this flavorful medley to a waiting bowl.

After that, it's time to get your skillet back on the stove. Heat up another 2 tablespoons of olive oil in it. Grab the mahi-mahi steaks, season them generously with salt and black pepper, and then coat them entirely with a hearty layer of blackening seasoning. Lay the seasoned steaks in the hot oil and let them cook until they're perfectly flaky, which usually takes around 3 to 4 minutes on each side. Once they're cooked to perfection, plate the steaks elegantly and generously top them off with the vibrant mango salsa before serving.
