- 1 cup of fragrant Thai jasmine rice
- Three-fourth cup of water
- A ripe pineapple
- Quarter cup of vegetable oil, divided
- Two beaten eggs
- Slices of Chinese sausage
- Handful of finely chopped carrot
- Handful of finely chopped onion
- Green peas and corn, each a quarter cup
Step 1
To start, give the jasmine rice a good rinse and place it in a rice cooker along with water. Let it cook as per the directions, usually around 15 to 20 minutes for perfectly fluffy rice.

Get your hands on a fresh pineapple and slice it in half lengthwise. Carefully scoop out the flesh, leaving a thin layer on the skin. In a nonstick skillet over medium heat, warm up 2 tablespoons of vegetable oil. Pour in your beaten eggs and cook them until they set, which should take about 5 minutes. Transfer the cooked eggs to a plate and cut them into small, delightful pieces. Use a paddle to gently fluff up the cooked rice for that perfect texture.

Next, in a separate dry skillet, cook and stir the Chinese sausage until it releases its flavorful fat, usually around 5 minutes. Transfer the cooked sausage to a bowl, keeping the tasty fat in the skillet for later use.

Now, add the remaining 2 tablespoons of oil into the skillet with the sausage fat. Let it heat up until you can feel the warmth rising. Toss in the carrot and sauté for a minute. Follow it up with the onion, peas, and corn, stir-frying until the onion turns soft and translucent, which should take around 3 to 5 minutes. Mix in half of the cooked rice first, ensuring it's well combined. Then add the rest of the rice along with the egg pieces and sausage slices. Gently fold in the pineapple cubes for a burst of tropical flavor.
Step 7
Scoop the flavorful fried rice mixture into the pineapple bowls, covering them snugly with aluminum foil.

Slide the filled pineapple bowls back into the oven and let them heat through for about 15 minutes until the flavors meld together perfectly. Serve up this delightful dish to impress your guests or enjoy it as a special treat for yourself.
