Ingredients
- 3 lbs of oxtail beef
- 1 small onion, finely chopped
- 2 bunches of fresh thyme, finely chopped
- 3 tbsp of browning sauce (e.g., GraceĀ® brand)
- 2 scallions, finely chopped
- 3 tbsp of red pepper flakes
- 2 tbsp of freshly grated ginger root
- 1 tbsp of ground allspice
- 3 cloves of garlic, finely chopped
- 2 bay leaves
- 3 cups of beef broth, separated
- 1 cup of water
- 1 tbsp of tomato paste
- 1 can (15 oz) of butter beans, drained and rinsed (optional)
- Salt and freshly ground black pepper to taste
Step 1
Mix together oxtail, onion, thyme, browning sauce, scallions, red pepper flakes, ginger, allspice, garlic, and bay leaves in a spacious bowl. Cover the bowl with plastic wrap and let it marinate in the fridge for 8 hours or even better, overnight for more infused flavors.
Step 2
When you are ready to cook, heat up a pressure cooker on medium-high heat. Add the beef and sear it until it releases its juices and turns a beautiful brown color, this should take around 10 minutes. Pour in 1 cup of broth and water, then cover the pot, lock the lid, and position the pressure regulator over the vent as per the cooker's instructions. Lower the heat to a gentle simmer and let it cook until the meat is mostly tender, about 2 1/2 hours.
Step 3
Next, mix the remaining beef broth and tomato paste into the cooked beef. Cover the pot again, ensuring it is sealed properly. Increase the heat to high and bring it to a boil until you hear a steady flow of steam whistling out, which should take about 7 to 10 minutes. Reduce the heat to low and continue cooking until the oxtail is tender, which could take anywhere from 40 minutes to an hour.
Step 4
Once the pressure has naturally released for 5 to 10 minutes, carefully unlock the lid and add in the beans, salt, and pepper. Turn the heat up to medium-high and let it cook for an additional 5 minutes to allow all the flavors to meld together perfectly. Enjoy your delicious and tender oxtail dish!
