Step 1

Add in chopped onion, cumin, coriander, salt, black pepper, cayenne, and turmeric. Lower the heat and let it simmer partially covered until the lentils are tender, which should take about 30 minutes.
Step 3
Next, stir in broccoli, tomatoes, peas, and a pinch of salt into the pot. Keep cooking and stirring occasionally until the lentils are nice and soft, approximately another 30 minutes.
Step 4
In a separate pot, mix the drained rice with 1 1/2 cups of water. Bring it to a boil, then reduce the heat to very low and let it simmer with a tightly fitting lid until the rice is cooked through and all the liquid is absorbed, which usually takes around 20 minutes.
Step 5
In a small skillet over medium heat, heat up some oil. Add sliced mushrooms, ginger, and minced garlic, and sauté them until they become fragrant, about 3 to 5 minutes. Pour this mixture over the lentils and stir well to combine. Let the lentils cook a little longer for the flavors to meld, approximately 5 more minutes. Serve the lentils alongside the rice for a delicious meal.
