Ingredients
- Freshly scrubbed sweet potatoes, medium-sized

- Chopped fresh parsley, half a cup

Step 1
Before you start, preheat your oven to 375 degrees F (190 degrees C) for that perfect cooking temperature. To prepare the sweet potatoes, use a fork to pierce them all over and then massage the skins with 1 tablespoon of sea salt for a burst of flavor. Place these prepped potatoes on a baking sheet lined with parchment paper for easy cleanup later.
Step 2
Let the sweet potatoes bake in the preheated oven until they are tender enough to cut easily with a knife, which should take around 50 to 60 minutes. Once done, take them out and allow them to cool for about 10 minutes before handling. While they cool, keep the oven on and halve the potatoes lengthwise.
Step 3
Scoop out the flesh of each potato half into a large bowl, being careful to maintain the integrity of the outer peel. Mash the sweet potato flesh until it's smooth, then add in cream cheese, butter, brown sugar, 1 teaspoon of salt, some pepper, cinnamon, a pinch of nutmeg, and ginger for that extra kick of flavor. Mix everything together until well combined. Fill each potato skin with this delicious mixture and place them back on the baking sheet. Sprinkle some panko bread crumbs on top for a satisfying crunch.
Step 4
For an extra touch, cut some vegan Cheddar into strips and layer them on top of the potatoes to create a lattice pattern. Pop the filled potato skins back into the oven and bake until they just start to brown, which should take around 10 to 12 minutes. Once ready, take them out and garnish with parsley and green onions before baking for an additional 3 to 5 minutes.
