  • 1 container of vegetable stock (32 fl oz)
  • 4 cups of water
  • 1 package of sliced kielbasa sausage (16 oz)
  • 2 tablespoons of salt
  • 1 tablespoon of ground black pepper
  • 1 tablespoon of dried parsley
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried thyme
  • 1 bay leaf
  • 1 package of uncooked orzo pasta (16 oz)

Step 1

In a versatile electric pressure cooker like Instant Pot®, mix together a delightful trio of navy, kidney, and black beans with 6 cups of water. Seal the lid securely and choose the high-pressure setting as per the appliance guidelines, then set the timer for 27 minutes. Allow the pressure to build for around 10 to 15 minutes.

Step 2

Meanwhile, in a large stockpot, warm up some olive oil over medium-high heat. Sauté a lovely medley of onion, carrots, and celery until the onion turns translucent, which should take about 5 minutes. Introduce some garlic to the mix and sauté until its aroma fills the air, roughly 1 minute. Sprinkle in some flour, stirring until everything is nicely coated. Pour in a combination of stock and water, then add kielbasa, salt, pepper, parsley, basil, thyme, and a bay leaf. Let the mixture come to a boil, then lower the heat and let it simmer for 10 minutes.

When the beans are ready, carefully release the pressure using the natural-release method, following the manufacturer's instructions, for a span of 10 to 40 minutes. Drain the beans gently.

Return your attention to the stew on the stove. Bring it back to a bubbling boil and introduce the cooked beans and orzo. Let everything simmer until the orzo reaches the desired softness and all the flavors meld beautifully, which should take about 9 minutes. Once ready, remove the pot from the heat and allow it to cool slightly before dishing up this delicious creation.
