- 2 large chicken breasts, thinly sliced
- Crema:
- 1 cup of rich sour cream
- ½ cup of creamy mayonnaise
- Zest from 2 limes
- Juice from another lime
- A touch of indulgent heavy cream
- 2 packages of crispy restaurant-style tortilla chips
- An 8-ounce pack of spicy pepper Jack cheese
- An 8-ounce pack of flavorful Mexican cheese blend
- Fresh cilantro for a burst of herbaceous goodness
Step 1
Combine tequila, oil, fresh lime juice, fragrant cilantro, earthy cumin, garlic powder, a touch of salt, and a hint of cayenne in a bowl to create a zesty marinade. Place the chicken slices in a plastic bag, pour in the marinade, and let it chill in the fridge for half an hour.
Step 2
In another bowl, mix together luscious sour cream, creamy mayonnaise, zesty lime zest and juice, and just enough heavy cream to achieve a smooth consistency for the crema. Store it in the fridge to chill.
Step 3
Take the marinated chicken out of the fridge and allow it to reach room temperature for 10 minutes. While waiting, preheat the oven to 350 degrees F (175 degrees C) and fire up the grill for some high heat cooking. Lightly oil the grill grate.
Step 4
Grill the chicken until it's beautifully caramelized and cooked through, approximately 5 minutes per side. Lay out tortilla chips on two baking sheets. Combine a mix of pepper Jack and Mexican cheeses and sprinkle half over the chips. Cut the grilled chicken into bite-sized pieces and spread them evenly over the cheese. Sprinkle the remaining cheese on top.
Step 5
Bake the loaded nachos in the preheated oven until the cheese is melted and gooey, for about 10 to 15 minutes. Once done, drizzle the lime crema generously over the nachos and finish off with a sprinkle of fresh cilantro for a burst of flavor.
